Ms. Apramita Devi is a PhD candidate at the CSIR-Central Food Technological Research Institute, Mysuru, Karnataka. Being a microbiologist as well as food technologist, Ms. Devi has been part of various research projects in areas ranging from thermal properties of food and modified atmosphere packaging to value addition of composite dairy food. As a Fulbright-Nehru fellow, Ms. Devi is working on optimizing wine fermentation based on the metabolic potential of malolactic bacteria. The results will reveal the uniqueness of Indian grape varieties in terms of their polyphenols and assist in the development of unique Indian wine appellations and starter cultures.
